Join us for a Japanese tea workshop at Flying Bird Tea Bar!

Uji (Kyoto) is renowned as the birthplace of Japanese tea culture and the production of some of Japan’s most exceptional teas. The region is particularly famous for matcha and gyokuro, which benefit from traditional shading techniques that intensify their umami and sweetness. Uji also boasts a long history of innovation, including the development of the tencha processing method, essential for creating matcha.

At this event, we will briefly introduce the cultivation and processing methods of traditional Japanese green teas, as well as the secrets behind their sweet flavor and umami taste. Starting with shading techniques, we will explore the differences between Sencha, Gyokuro, and Tencha, followed by the preparation of two loose-leaf green teas and a matcha from Uji. By the end of the workshop, participants will be able to place traditional Uji teas within the broader tea world and confidently prepare them.
