Green Apple, Floral Yunnan Green
The character of Yunnan Maojian green tea is lively and more sweet than Yunnan Maofeng. Its flavor profile is fresh and slightly tart, often with a citrus or green apple acidity, accompanied by notes reminiscent of wild herbs and naturally growing mountain plants. Its aroma evokes greenery—fresh hay or a wildflower meadow. Typically made from small, slender, dark green leaves, it brews into a more vigorous and distinctive tea, reflecting the raw, mountainous nature of Yunnan’s wild growing regions. Still bright and sweet but much more strong and intense than the Eastern-Chinese green teas. When oversteeped, the tea reveals dominant notes of bitterness, wildflowers, and tartness. To avoid this, it’s best to reduce the amount of leaf used or pay close attention to steeping time.
Green tea cultivation in Yunnan has a history of only a few decades. During the Japanese occupation and the Second World War, harvesting in the eastern provinces, which traditionally produced green tea, was difficult. Tea officials were therefore sent from Beijing to Yunnan, the only province not affected by international conflicts, to try to produce green-style teas (e.g. bi luo chun) from local varieties. Buds were collected from all over Yunnan, and the result was great! Yunnan green teas are usually characterised by strong green spices and tropical fruit-like aromas. The green teas of Yunnan province are renowned for their strong, green herbal aroma and the strength of the tea, often reminiscent of puer tea.

DOSAGE & BREWING GUIDELINE
A) Traditional way in a gaiwan/clay teapot: 3-5 grams + 150 ml water. According to the Gongfucha, it can be infused at 80-85°C, for 30 seconds, 8-10 times.
B) Modern brewing in a jug: 5 grams + 300-500 ml water. It can be infused at 85 C°, for 2 minutes, 2-3 times.
