CHARACTER

Wazuka is the largest tea-producing settlement in the region of Uji, and is famous mainly for its sencha teas. In Japan, it is believed that the best sencha comes from this region. In recent years, we have featured tea farmers’ teas from Wazuka, and now we offer the top tea from a traditional tea house in Wazuka. This hand-picked tea (tezumi) is one of the most enchanting sencha we’ve tried, evoking Kurosaka-san’s 2017 West Honshu Award-winning okajama tea. Enjoy complex flavours and a long aftertaste!

We could safely start it in the gyokuro tasting category, it gives such rich, soupy infusions, it’s no coincidence that it’s recommended with 50 degree water. But while a gyokuro keeps the umami inside, there are plenty of grassier, more raw sencha flavours here. The leaves are bright, dark green pine needles. And after a little soaking, the tender green fresh shoots open up.

The Bikouen tea house in Kyoto, which mainly offers high quality matcha teas, also maintains a not very wide but remarkable selection of looseleaf teas. The Bikouen tea house was founded in 1872. They are the official matcha suppliers to the Nishi Honganji and Higashi Honganji buddhist temples in Kyoto, and now also to the Flying Bird tea house in Budapest. They are also associated with the Yabunouchi tea school, which is the oldest surviving tea school and one of the four major chanoyu schools in Kyoto.

DOSAGE & BREWING GUIDELINE

6g+200 ml. 60-80 °C water.
The first infusion is 1 minute, then in 20-30 second infusions 3-4 more times.
