CHARACTER

A tea made from the Tsuyuhikari cultivar, deep-steamed in the fukamushi style. Around Fukuoka, the fukamushi technique has almost become standard—bringing out the deeper, softer flavors of the tea leaves with less bitterness and sharpness.
Even when deep-steamed, Tsuyuhikari remains a bolder, more robust tea compared to the more popular Saemidori, which is wonderfully sweet and creamy-soft but has more fleeting flavors.
This is a fruity, strong tea with a long-lasting aftertaste.

We discovered this tea during our professional trip to Japan in May 2023, when we visited the award-winning Ushijima company, a tea producer with over 100 years of history, based in Fukuoka.

DOSAGE & BREWING GUIDELINE

A) Traditional way in a houhin/kyusu teapot: 5-6 grams + 150-200 ml water. 70 C° water,  60 sec, 30 sec

B) Western brewing: 3-5 grams + 300-500 ml water.  Infuse with 70 C° water 2 times, for  1-2 minutes. / 2 inf.
